The World's Finest Gastronomy in the Middle of the World

 

Millions of years ago, way before the Andes Mountains emerged, sunny days, brisk mornings and rainy nights dominated the nearby landscape.  As the forces of the Earth decided to speak out loud, eruptions changed the land forever… streams became rivers, and rivers brought nutrients to new lands.  The nearby ocean bloomed with life and provided a realm of marine diversity.  This unique geographic transition resulted in a group of mountains that trapped moisture as molecules climbed towards the equatorial sky, and as that occurred, biodiversity concentrated its power under the influence of natural selection.  Eons later, Man used these lands, and their culture and traditions evolved too.  The result: Ecuador!  A land where everything grows and where sunlight shines brightly for twelve hours every single day of the year. 

The varied foods of Ecuador represent not only the country's biodiversity, but the traditions of Man around such diversity.  They also show how important is to recognize the courageous blending of two cultures…  Spanish and Inca; a moment in history where fire met wisdom. Generations later, these traditions resurface in what Ecuadorians eat. 

Today, we are pleased to share with every one of you, a little more of who we are, what we feel and how we express it.  The food of Ecuador only contributes further to the country's beauty, and as we savor fish products from the Coast, we won’t easily forget the aroma of myriad vegetables, meats, or the prism of colors of tropical fruits, or the flavor of soups, juices, and more.  The food you will experience in Ecuador may not be the way-out exotic, or ayayay-spicy, but it goes a long way to explain the country's diversity, traditions, textures, and flavors. Ecuadorians recognise this universal truth. That's why, at every meal, they will tell you and will tell each other to enjoy it fully…  Ecuadorians say Buen Provecho!
